Jerk Chicken Skewers Served with Tropical Salsa

WHAT YOU NEED:
Melani’s Jerk MarinadeMelani’s Jerk Chicken KababsMelani’s Tropical Salsa
½ cup ground allspice berries 
½ cup brown sugar 
2 bunches scallion 
6 garlic cloves 
4-6 scotch bonnet peppers (seeded, cored)
2 tbsp soy sauce 
1 tbsp dried thyme (or 2 tbsp fresh thyme) 
1 tsp cinnamon 
½ tsp nutmeg 
Kosher salt (to taste) 
Black pepper (to taste)
5lbs boneless skinless chicken thighs 
5 tbsp jerk marinade
2 cups diced pineapple
2 cups diced mango 
⅓ cup chopped red pepper 
¼ cup chopped red onion 
¼ cup lime juice 
Salt and pepper

Jerk Red Snapper Served with Rice & Peas

WHAT YOU NEED:
Delvon’s Jerk FishDelvon’s Rice & Peas
4 medium sized snapper fish 
4 tbsp all purpose seasoning 
4 tbsp black pepper 
4 tbsp salt 
4 tbsp caribbean spice 
1.5 cups of oil 
1 roll paper towel
4 cups of rice (parboiled) 
1 can red kidney beans 
1 can coconut milk or coconut cream 
1 bunch spring onion 
Thyme (no specific amount) 
2 tbsp brown sugar 
1.5 tsp salt 
1 red sweet pepper 
1 yellow sweet pepper 
4 scotch bonnet pepper 
2 cups vinegar 
2 medium sized white onion 
2 tbsp butter
